We undertook this project with the view to make an sophisticated wine that has great personality, which leaves you smiling and wanting more.

We have used Viognier from our 2009 Vintage in making this sparkling wine. The completed Viognier then enters into a process known as the Méthode Traditionelle. This approach sees the wine undertaking a 2nd stage of fermentation in bottle. This second fermentation is induced by adding several grams of yeast and liquor. The yeast releases carbon dioxide as it converts the sugar to alcohol, which gives the wine its sparkle.

This Viognier is a non traditional sparkling wine varietal, but provides the ideal base for a light, yet crisp and flavoursome sparkling white wine. The Imperial Blonde is the perfect accompaniment to canapés and is a fabulous, finely beaded start to any celebration.

The wine has depth of flavour exhibiting apricot, peach and flower blossom notes of Viognier, with a persistent bead. It is simply Chic, Cheeky and Seductive!
