![]() The Crimson Méthode 2006 We undertook this project with the view to make an elegant wine that has great personality, which leaves you smiling and wanting more. We have used Shiraz from our 2006 Vintage in making this sparkling wine. The shiraz spent almost 2.5 years in Oak before being ready for the Méthode Traditionelle. This approach sees the wine undertaking a 2nd stage of fermentation in bottle. This second fermentation is induced by adding several grams of yeast and liquor. The yeast releases carbon dioxide as it converts the sugar to alcohol, which gives the wine its sparkle. The bottle is then riddled, so that the lees settles in the neck of the wine bottle. This process takes approximately 9 months to complete in very controlled conditions. The neck is then frozen, and the cap removed. The pressure in the bottle forces out the lees, and the bottle is quickly corked. The bead on this sparkling wine is very fine, providing a velvety mouthful of Sparkling Shiraz. It is simply Chic, Cheeky and Seductive!
